Dornfelder is a relatively recent arrival on the wine grape scene. Use oak aging, making the most of Dornfelder's ability to take on the additional textures and spice imparted by the barrique process. It is commonly made in a trocken (dry) style and is often blended with Germany's most renowned red grape variety, Spätburgunder (Pinot Noir). The grape has deep red flesh and produces wines that are rich in pigment and often display a slightly floral character. Much of its appeal and subsequent success with winemakers is due to its hardiness and resilience.
The climate of Franken Schoepple is continental, but it is also affected by the Mediterranean climate, with hot and dry summers, cold winters, high annual rainfall, and long-lasting early frosts. The microclimate of this producing area is conducive to the ripening of grapes due to the influence of the river, but it is not suitable for the growth of late ripening Riesling grapes. The area is dominated by white grapes, the most important white grape varieties are Muller-Thurgau, Silvaner and new hybrid varieties such as Bacchus and Kerner.
